What OS for dedicated sim racing PC?

I've been using Windows 7 and have turned off any updates. I don't update Windows or my graphics card because things always get messed up and I'm not savvy enough to fix them.

But...I just saw this:

So what is the ideal setup to use for a dedicated sim racing PC?  Disclaimer: I hate PCs and wish I could run my rig off a Mac.  Should I just stick with Win7?

If you go 7th or 8th gen Intel CPU you will have no choice but to run Windows 10...  I don’t see them pulling off selling Windows as a service as they have done with Office. There will be a lot of push back.  For Enterprise (Businesses) this model makes a lot of sense, for consumers it will go over like a giant fart in church.
